For the Base:
- 200 g Cookies (butter cookies or chocolate cookies)
- 100 g Butter, melted
For the Filling:
- 500 g Cream cheese (room temperature)
- 200 g Nutella
- 100 g Sugar
- 3 Eggs (at room temperature)
- 1 tsp Vanilla extract
- 1 tsp Agar-agar
- Cocoa powder (optional)
- Vegetable cream (for serving)
Instructions
Step 1: Prepare the Base
- Crumble the cookies in a food processor or in a freezer bag with a rolling pin until finely crushed. Mix the crumbs with the melted butter until well combined.
- Press the cookie-butter mixture evenly into a greased springform pan (approx. 24 cm diameter) and form a firm base. Chill for about 10 minutes to set.
Step 2: Make the Filling
- In a large bowl, thoroughly mix cream cheese, Nutella, and sugar. Add the eggs one by one, mixing well after each addition.
- Stir in the vanilla extract. Whisk the agar-agar with a little water and add this mixture to the cheesecake filling. Mix everything well.
Step 3: Assemble and Bake
- Pour the finished filling evenly over the chilled cookie base. Smooth the surface with a spatula.
- Bake the cheesecake in a preheated oven at 160 °C (convection) for approx. 45-50 minutes, or until the filling is set. Let it cool to room temperature, then chill for at least 4 hours (or overnight).
Step 4: Serve
- Garnish with vegetable cream before serving and enjoy!
