A delicious and healthy low-carb take on the classic Flammkuchen, featuring a simple quark and egg crust topped with your favorite vegetables and protein. Perfect for a light meal or appetizer.

For the Dough:
- 250 g Quark, lean
- 2 Eggs, large
- 100 g Almond flour
- 1 tsp Baking powder
- 1 pinch Salt
- 1 tbsp Vegetable oil (e.g., olive oil)
For the Topping:
- Colorful vegetables (e.g., bell peppers, onions), as desired
- Chicken breast (cooked and diced), as desired
- Herbs (e.g., chives or parsley), as desired
Instructions
Dough Preparation:
- In a large bowl, combine the quark with the eggs until a homogeneous mixture is formed.
- Add the almond flour and baking powder, and mix well until the dough is smooth and free of lumps.
- Add a pinch of salt and one tablespoon of vegetable oil to the dough and stir everything thoroughly.
Assembly and Baking:
- Place a piece of parchment paper on a baking sheet and sprinkle some almond flour on it.
- Roll out the dough evenly to about 5 mm thickness.
- Evenly spread the diced chicken breast over the rolled-out dough.
- Generously top the Flammkuchen with colorful vegetables such as bell peppers and onions.
- Preheat the oven to 220 degrees Celsius.
- Slide the baking sheet into the oven and bake the Flammkuchen for 15-20 minutes, until the edges are golden brown.
- Remove the Flammkuchen from the oven and sprinkle with freshly chopped herbs just before serving.
Notes
- Store any leftover Flammkuchen in the refrigerator.
- Reheat it briefly in the oven.
- Serve with fresh arugula on top.
