Description

A delicious and healthy low-carb take on the classic Flammkuchen, featuring a simple quark and egg crust topped with your favorite vegetables and protein. Perfect for a light meal or appetizer.


Ingredients

For the Dough:

  • 250 g Quark, lean
  • 2 Eggs, large
  • 100 g Almond flour
  • 1 tsp Baking powder
  • 1 pinch Salt
  • 1 tbsp Vegetable oil (e.g., olive oil)

For the Topping:

  • Colorful vegetables (e.g., bell peppers, onions), as desired
  • Chicken breast (cooked and diced), as desired
  • Herbs (e.g., chives or parsley), as desired

Instructions

Dough Preparation:

  1. In a large bowl, combine the quark with the eggs until a homogeneous mixture is formed.
  2. Add the almond flour and baking powder, and mix well until the dough is smooth and free of lumps.
  3. Add a pinch of salt and one tablespoon of vegetable oil to the dough and stir everything thoroughly.

Assembly and Baking:

  1. Place a piece of parchment paper on a baking sheet and sprinkle some almond flour on it.
  2. Roll out the dough evenly to about 5 mm thickness.
  3. Evenly spread the diced chicken breast over the rolled-out dough.
  4. Generously top the Flammkuchen with colorful vegetables such as bell peppers and onions.
  5. Preheat the oven to 220 degrees Celsius.
  6. Slide the baking sheet into the oven and bake the Flammkuchen for 15-20 minutes, until the edges are golden brown.
  7. Remove the Flammkuchen from the oven and sprinkle with freshly chopped herbs just before serving.

Notes

  • Store any leftover Flammkuchen in the refrigerator.
  • Reheat it briefly in the oven.
  • Serve with fresh arugula on top.
