- 1 large cauliflower, fresh and firm
- 2 eggs, fresh
- 100 g grated cheese, mild (e.g. mozzarella or gouda)
- 50 g almond flour, unsweetened
- 1 tsp salt, high-quality sea salt
- 1 tsp pepper, freshly ground
- 1 tsp paprika powder
- Fresh herbs (e.g. parsley or chives), finely chopped

- Cut the cauliflower into florets and steam in a steamer or in a pot with boiling water for about 10 minutes.
- Drain the cauliflower and let it steam well.
- Place the steamed cauliflower in a bowl and mash well with a potato masher or fork until it forms a smooth mass.
- Let the cauliflower mixture cool slightly.
- Add eggs, grated cheese, almond flour, salt, pepper, and paprika powder to the cauliflower mixture.
- Stir everything thoroughly until all ingredients are well combined.
- Using your hands, take small portions of the mixture and form them into flat patties.
- Place the patties on a baking sheet lined with parchment paper.
- Preheat the oven to 200 degrees Celsius.
- Bake the patties for about 25-30 minutes until golden brown, carefully turning them over halfway through.
- Remove the freshly baked patties from the oven and let them cool briefly.
- Serve the patties warm with a dip of your choice.
