Description

Delicious and healthy air fryer schnitzel made with kohlrabi and fresh herbs. A perfect vegetarian main course that’s crispy on the outside and tender on the inside.

Ingredients

Ingredients:

  • Kohlrabi (fresh, firm, without bruising)
  • Paniermehl (plain or whole wheat, or gluten-free alternative)
  • Eggs (fresh, room temperature)
  • Herbs (e.g., parsley, chives, freshly chopped)
  • Olive oil
  • Salt
  • Pepper

Instructions

Instructions:

  1. Peel the kohlrabi and cut into approximately 1 cm thick slices.
  2. In a bowl, combine breadcrumbs with salt, pepper, and chopped herbs.
  3. In another bowl, crack the eggs and whisk well.
  4. Dip one kohlrabi slice first into the egg, then coat thoroughly with the breadcrumb mixture, ensuring each side is well covered. Repeat this step with all slices.
  5. Preheat the air fryer to 200 degrees Celsius.
  6. Place the breaded kohlrabi slices in a single layer in the air fryer basket.
  7. Spray or drizzle some olive oil over the schnitzels.
  8. Cook the schnitzels for about 15 minutes, or until golden brown, turning them halfway through the cooking time.
  9. Remove the crispy schnitzels from the air fryer and let them cool slightly.
  10. Serve immediately with a fresh salad or a dipping sauce.

Notes

Tips and Storage:

  • Choose fresh, firm kohlrabi bulbs without bruising and with a pleasant aroma.
  • Use plain or whole wheat breadcrumbs for extra crunch and nutrients. Gluten-free breadcrumbs are an alternative.
  • Fresh eggs ensure perfect adhesion of the breading.
  • Fresh herbs add color and flavor. Chop them finely for an intense aroma.
  • A light drizzle of olive oil before cooking ensures the schnitzels become wonderfully crispy.
  • Adjust salt and pepper to taste.
  • For more flavor, you can mix different herbs like thyme or oregano into the breadcrumbs.
  • Make sure to dry the kohlrabi well before breading to ensure better adherence of the coating.
  • Experiment with different spices in the breadcrumbs to customize the flavor to your preferences.
  • Store any leftover schnitzels cool in an airtight container.
  • Reheat the schnitzels briefly in the air fryer to restore crispiness.
  • Serve immediately with a fresh salad or a delicious dipping sauce of your choice.
  • Garnish with fresh herbs or a squeeze of lemon – this will enhance the flavor even more!
  • Instead of classic breadcrumbs, almonds or oats can be used.
