- Peel the kohlrabi and cut into approximately 1 cm thick slices.
- In a bowl, combine breadcrumbs with salt, pepper, and chopped herbs.
- In another bowl, crack the eggs and whisk well.
- Dip one kohlrabi slice first into the egg, then coat thoroughly with the breadcrumb mixture, ensuring each side is well covered. Repeat this step with all slices.
- Preheat the air fryer to 200 degrees Celsius.
- Place the breaded kohlrabi slices in a single layer in the air fryer basket.
- Spray or drizzle some olive oil over the schnitzels.
- Cook the schnitzels for about 15 minutes, or until golden brown, turning them halfway through the cooking time.
- Remove the crispy schnitzels from the air fryer and let them cool slightly.
