- Pumpkin, Hokkaido or Butternut
- Feta cheese, crumbled
- Olive oil, extra virgin
- Garlic, fresh
- Parsley, fresh chopped
- Pepper and salt, to taste

- Bring a large pot of water to a boil and add salt generously.
- Add the pasta and cook according to package directions until al dente.
- Cut the pumpkin into small cubes.
- Preheat a pan over medium heat and add a little olive oil.
- Sauté the pumpkin cubes for 10-15 minutes, or until tender and lightly caramelized.
- Add the finely chopped garlic shortly before the pumpkin is done cooking.
- Sauté the garlic for about 1-2 minutes until fragrant, being careful not to burn it.
- Drain the cooked pasta, reserving about a cup of the cooking water.
- Add the cooked pasta to the pan with the pumpkin cubes and add some of the reserved cooking water as needed.
- Mix everything well and sprinkle the crumbled feta cheese over the top.
- Gently toss the dish to combine.

- Garnish the dish with freshly chopped parsley and another drizzle of olive oil.
