- Gnocchi, fresh or frozen
- 500 g Chicken Breast, cut into pieces
- 2 Carrots, diced
- 1 Bell Pepper, diced
- 1 large Onion, chopped
- 2 cloves Garlic, fresh
- 500 ml Vegetable Broth
- Freshly Chopped Parsley, for garnish
- 2 tablespoons Olive Oil, extra virgin

- Heat olive oil in a large pot over medium heat.
- Add the diced chicken breast and sauté for about 5–7 minutes until golden brown.
- Add the chopped onion, garlic, and diced carrots and bell pepper.
- Sauté everything together for another 4–5 minutes until the vegetables soften.
- Pour about 500 ml of vegetable broth into the pot and stir well.
- Bring everything to a boil.
- Once the broth is boiling, carefully add the gnocchi.
- Cook the gnocchi for 2–3 minutes or until they float to the top.
- Season the goulash to taste with salt and pepper as desired.
- Serve the Gnocchi-Goulash hot in deep plates or bowls and garnish generously with freshly chopped parsley.
- Add a drizzle of olive oil and enjoy.
