Instructions

For the Almond Base:

  1. Coarsely chop the almonds in a food processor or with a knife.
  2. Toast them in a dry pan over medium heat for about 5 minutes until golden brown and fragrant. Stir them regularly!
  3. In a large bowl, beat butter and sugar until creamy.
  4. Add the eggs one by one and beat well.
  5. Then, mix in the quark and vanilla extract.
  6. Gently fold in the toasted almonds.
  7. Add about 100 ml of fruit juice to make the mixture smooth, ensuring it doesn’t become too liquid.
  8. Dissolve agar-agar in about 50 ml of warm water and add it to the dough mixture. Stir well to distribute evenly.
  9. Pour the batter into a greased springform pan (26 cm diameter) and bake in a preheated oven at 180 degrees Celsius (top/bottom heat) for about 45-50 minutes, or until golden brown and a toothpick inserted comes out clean.
  10. Let the cake cool completely and generously dust with powdered sugar.
  11. Optionally, garnish with fresh berries or mint leaves for a beautiful color contrast!
