  • 2 tablespoons butter, softened
  • 2 slices bread, sturdy (e.g., sourdough or whole wheat)
  • 1 cup cheese (mix of Gruyère and mild Cheddar, freshly grated)
  • 3 tablespoons broth (vegetable or chicken)
  • Vegetable Gelling Agent (optional, e.g., agar-agar)

  1. Slice onions into thin rings.
  2. Heat 2 tablespoons of butter in a large skillet over medium heat and add the onions.
  3. Sauté the onions for about 15 minutes until golden brown.
  4. After about 10 minutes, add 3 tablespoons of broth and stir well.
  5. Generously butter one side of each slice of bread.
  6. Spread a layer of grated cheese on the unbuttered side.
  7. Place a few spoonfuls of the caramelized onions on top of the cheese and sprinkle with additional cheese if desired.
  8. Place a second slice of bread, buttered side out, on top of the filling.
  9. Heat a skillet over medium heat and place the sandwich in it.
  10. Fry the sandwich for about 4-5 minutes on each side until golden brown and crispy.
  11. Remove the sandwich from the skillet, let it cool briefly, and cut diagonally.
  12. Garnish with fresh herbs like thyme or parsley if desired.
