- 4 Ripe Pears
- 150 g Butter, soft
- 200 g Sugar, fine
- 4 Eggs, fresh
- 250 g Flour, Type 405
- 50 g Cocoa Powder, unsweetened
- 1 packet Vegetable Gelling Agent (e.g., Agar-Agar)
- 200 ml Sweet Fruit Juice (e.g., Apple or Grape Juice)
- 1 tbsp Lemon Juice
- 200 g Chocolate (dark)

- Preheat oven to 180 degrees Celsius.
- Grease a springform pan (26 cm diameter) with butter and line the base with parchment paper.
- In a large bowl, cream together soft butter and sugar until smooth.
- Add eggs one at a time and beat well.
- Mix flour and cocoa powder in a separate bowl.
- Gently fold the flour-cocoa mixture into the butter-egg mixture.
- Pour the batter into the prepared springform pan and bake for about 25 minutes, or until a toothpick inserted comes out clean.
- Let the sponge cake cool completely.
- Peel, core, and thinly slice the ripe pears.
- Toss the pear slices with lemon juice.
- Heat the fruit juice in a small saucepan over medium heat.
- Add sugar to the fruit juice as desired and bring to a boil.
- Reduce heat and stir in the vegetable gelling agent.
- Simmer for a few minutes until the sauce thickens.
- Cut the cooled sponge cake horizontally (optional).
- Place the first layer on a serving plate, top with pear slices, and drizzle with some chocolate sauce.
- Cover with the second sponge cake layer.
