- 1 Hokkaido pumpkin, firm and deep orange
- 200 g Feta cheese, high quality and fresh
- 2–3 tablespoons Olive oil, high quality
- 1–2 teaspoons Herbs de Provence, fresh or dried
- Pepper, freshly ground
- Salt
- Pumpkin spice, optional (cinnamon and nutmeg)

- Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit).
- Carefully halve the Hokkaido pumpkin with a sharp knife.
- Remove the seeds with a spoon.
- Cut the pumpkin into cubes or wedges.
- In a bowl, combine olive oil, pepper, salt, and Herbs de Provence.
- Stir well to mix the flavors.
- Add the pumpkin pieces to the bowl with the marinade and mix thoroughly.
- Spread the marinated pumpkin pieces evenly on a baking sheet.
- Ensure the pumpkin pieces do not overlap.
- Place the baking sheet in the preheated oven and bake the pumpkin for about 25 minutes.
- After about 15 minutes, evenly distribute the Feta cheese over the pumpkin.
- Remove the baked Hokkaido pumpkin from the oven and let it cool slightly.
- Serve warm directly from the baking sheet or on a nice platter.
- Garnish with fresh basil or parsley.
