  • Large wheat tortillas, fresh
  • Fresh spinach, crisp and bright green
  • Feta cheese, crumbly and rich in flavor
  • 1 small onion, diced
  • Red or yellow bell pepper, cut into small pieces
  • 1 tablespoon olive oil
  • Pepper, freshly ground
  • A pinch of cumin (optional)

  1. Dice the onion and bell pepper into small cubes.
  2. Wash the fresh spinach thoroughly and chop it coarsely.
  3. Heat a tablespoon of olive oil in a large skillet over medium heat.
  4. Add the diced onion and sauté for about two minutes until translucent.
  5. Add the bell pepper and sauté everything together for another three minutes.
  6. Add the chopped spinach to the skillet and stir until it wilts.
  7. Add the crumbled feta cheese to the skillet.
  8. Season with pepper (and optional cumin) and stir well.
  9. Place one tortilla on a clean work surface.
  10. Spread a generous portion of the filling on one half of the tortilla.
  11. Fold the other half of the tortilla over.
  12. Heat a little more olive oil in the same skillet over medium heat.
  13. Carefully place the filled quesadilla into the skillet and fry for about three to four minutes per side, until golden brown and crispy.
  14. Repeat with the remaining tortillas.
  15. Cut into pieces and serve warm.
