- Fresh spinach, crisp and bright green
- Feta cheese, crumbly and rich in flavor
- 1 small onion, diced
- Red or yellow bell pepper, cut into small pieces
- 1 tablespoon olive oil
- Pepper, freshly ground
- A pinch of cumin (optional)

- Dice the onion and bell pepper into small cubes.
- Wash the fresh spinach thoroughly and chop it coarsely.
- Heat a tablespoon of olive oil in a large skillet over medium heat.
- Add the diced onion and sauté for about two minutes until translucent.
- Add the bell pepper and sauté everything together for another three minutes.
- Add the chopped spinach to the skillet and stir until it wilts.
- Add the crumbled feta cheese to the skillet.
- Season with pepper (and optional cumin) and stir well.
- Place one tortilla on a clean work surface.
- Spread a generous portion of the filling on one half of the tortilla.
- Fold the other half of the tortilla over.
- Heat a little more olive oil in the same skillet over medium heat.
- Carefully place the filled quesadilla into the skillet and fry for about three to four minutes per side, until golden brown and crispy.
- Repeat with the remaining tortillas.
- Cut into pieces and serve warm.
